  1. Thank you for all these excellent pointers- I learned a lot! Growing up, we often had cold cuts in the fridge for almost two weeks. It was a miracle that nobody got sick!

  2. I haven’t eaten meat for 35 years and do not miss it. I kept it off my plate after reading “Slaughterhouse” by Gail Eisnitz. The meat industry does not want consumers to know what is in the animal products they push but the facts are available. It’s getting dangerous for seafood consumption too, so avoid anything that is farm raised if you want to live healthy. Consumer Reports just published a report on fast food restaurants that serve beef raised without antibiotics or pesticides. The only restaurant to get an A rating was Chipotle. Most of the others were F ratings. Ok now that I’ve put a good word in for food safety I’ll step down from my soap box!

    • More of us need to join you on you “soapbox,” Joanne. I think you’re spot on. Still for folks who want to enjoy meat, there are ways to reduce chances of becoming ill and I liked Caitlin Dow’s suggestions.
